Each night you will have up to 10 different dishes to chose from and to wet the appetite a little here is an example of some of our specialties; House Cured Foie Gras with Poached Plums and Ice-Wine Jelly , Spice & Herb cured suckling pig belly. Fillet of Doyle’s Beef , Tempura of Wicklow Lamb Sweetbreads with Pickled Mushrooms. Tequila and Coriander House smoked Salmon with Spicy Mango and Jicama Salad, Liquorice Roasted Veal Sweetbreads with Rhubarb Infused Pear and Ketaffi Pastry, Prime Fish, Duck, Rabbit, Lamb and shellfish and deserts such as Palette of Homemade Rathsallagh Sorbet and Ice-Cream, Mille Feuille of White Chocolate with Poached White Peach, Irish and Continental Cheeses and home made petit fours. The Blue Book Gourmet Concert at Rathsallagh.
The Blue Book Concert Tour comes to Rathsallagh on Wednesday the 25th June 2008. Karin Leitner is a world renowned flautist who has played with the Vienna State Opera. She played Principle Piccolo in the Royal Philharmonic Orchestra, BBC Symphony Orchestra and London Mozart Players. She composes her own music for flute, harp and string orchestra and travels world wide with concerts. Karin is accompanied by Krassimira Ziegler who was the Principle Harpist of the Bilbao Symphony Orchestra and plays in an Irish folk Ensemble in Vienna. Karin and Krassimira will give a concerto of light classical music with some Lyric FM Favorites as well as some of her own Celtic compositions. The evening commences with a champagne reception at 7.00 pm followed by the concert and Dinner.
